Root cellar

At this point, my pantry is looking like an old fashioned root cellar! Tonight, preserved three pints of salsa and 7 bottles of jalapeno hot sauce. I have what should amount to 4-5 half pints of tomato paste on the stove and one more batch of tomatoes go go tomorrow. Then I think I'll be done with tomatoes for the year. Rest of the tomatoes in the garden will remain for just plain eating. 

I'm rather proud of this. Not many people have such a collection of foods they produced themselves in the home these days. Easy to see why. I takes a lot of work. However, it's worth the work in the long run. Fewer chemicals in the food. Though the best part of the collection is the knowledge, experience and equipment that goes into it.

Next, I think I'm going to try preserving meats. However, to can meats I am sure takes a pressure canner, which is expensive. 

Daughter still wanted to keep today as a lazy day. I talked with her about it and confirmed that's what is going on. She did confirm that she just likes keeping Sunday as a lazy day to rest up for the week ahead. It's a transition day for her. I think weekends are important for kids. Time for recreation and for rest when they expend so much energy learning and doing homework the rest of the week. 

We didn't get her boxes sorted out this weekend. I'm not going to push for it to be done all in one weekend. I figure if we go through two boxes each weekend, we'll be done in a 2-3 weeks. I got more fabric boxes for her room today. Try and get the last two drawers done this week. 

Definitely had an issue going on for last few days with existing health problems. Somewhat my own fault. Been experimenting on just how much I can back away from my most drastic regimens. Looks like I can't back off yet.
